Decadent No-Waste Carrot Halwa

Bought that bag of carrots? It’s not just for bunnies, I promise! In this episode of The Sunday Cooking Club, I teach how mundane carrots can be transformed into multiple, delicious dishes. In the video, I also share my meal-prep ideas and hacks to use up that entire bag of carrots.
Dish: Decadent, Fudgy Carrot Halwa that is made with roasted carrots slowly simmered in saffron and cardamom-scented milk. Happy cooking!
Ingredients for Carrot Halwa:
- 1 kg carrots
- 1 cup cane sugar
- 2 l milk
- A generous pinch of saffron
- 1 tsp cardamom Powder
- 3 tbsp ghee
Prep: rinse and scrub carrots.
Garnish: chopped and roasted nuts like pistachios and cashews (slivered almonds are also great here).
Serve: as a dessert.
